Baked Salmon with Orzo Pasta

Combining tender salmon filets with creamy orzo pasta, this dish is seasoned to perfection and topped with Parmesan cheese for an added touch of flavor. It’s a breeze to prepare and makes for a comforting dinner that the whole family will love. If you like your orzo a little al dente, use only 1 1/2 cups of water/broth. Feel free to customize your orzo with vegetables like broccoli, squash, zucchini, or sautéed onions. For seasoning, you can use Italian seasoning with a pinch of freshly ground pepper or your favorite seafood seasoning. Enjoy your meal! This recipe takes 10 minutes of prep and 40 minutes of cooking.
Directions
- Preheat your oven to 400°F (200°C).
- In a baking dish, combine the soup mix, orzo, thyme, and rosemary, and boiling water or unsalted broth. Mix well.
- Bake in the preheated oven for 20 minutes.
- Remove the dish from the oven and stir the orzo. Add in Parmesan cheese, and olive oil. Pat the orzo down and level.
- Place the salmon filets on top of the orzo. Sink they in a little bit. Sprinkle the salmon with additional seasoning if desired. Drizzle the orzo with cream, up to 3/4 cup. Sprinkle the salmon with black pepper and seasoning. Now add in the tomatoes, pushing them into the cream and orzo.
- Return the dish to the oven and bake for another 17 minutes, or until the salmon is cooked through.
- Let it cool slightly before serving.

2 teaspoons of powdered soup mix
1 cup orzo
1 tablespoon Thyme sprigs
1 Rosemary sprig
2 cups boiling water or unsalted broth (or 1½ cups for al dente orzo)
1 cup grated Parmesan cheese
1 tablespoon olive oil
2 6-oz wild caught Salmon filets
Up to 3/4 cup cream
A few sprinkles of black pepper
Additional seasoning for salmon (optional)
Handful of Cherry tomatoes (optional); half or quarter them
