Seared Scallops with Chives

Seared scallops are a true delicacy, requiring just a few simple ingredients to enhance their naturally sweet, buttery flavor. This quick and elegant recipe brings out the best in scallops with a golden sear, rich butter, and fresh chives. A touch of lemon zest adds brightness, making this dish light yet indulgent. Perfect for a special occasion or an easy gourmet meal at home, these scallops come together in minutes, delivering restaurant-quality flavor with minimal effort. Serve immediately and enjoy the delicate balance of crisp, tender, and aromatic perfection. This recipe takes 10 minutes of prep and 5 minutes of cooking.

Directions

  1. In a clean large skillet that could hold all the scallops, slick the bottom of the plan with 1 Tablespoons avocado oil and sauté the scallops for 2 minutes per side over medium high heat.
  2. Season with the salt.
  3. Reduce the heat to medium.
  4. Add in 2 teaspoons of butter and half the chives once the scallops are cooked through. They are cooked through when they are opaque inside.
  5. Let the butter melt and swirl it all around in the skillet together.
  6. Turn off the heat and gently scrape the scallops and butter into a dish.
  7. Sprinkle the other half of the chives and lemon zest.
  8. Serve immediately.

Makes 2 servings

1 Tablespoon avocado oil

6 to 8 Scallops

1/4 teaspoon salt

2 teaspoon unsalted butter

1 tablespoon chopped fresh chives

lemon zest from half of a lemon (either zested with a zester or slice the zest)
