Oyster Po Boy

This is a great recipe if you are looking for something a little different. If you don’t want so much work, you can use the JO Oyster Breading instead of the flour, egg, panko, breadcrumbs and seasoning. This recipe takes 15 minutes or prep and 15 minutes of cooking.

Directions

  1. On a plate sprinkle the ¼ cup of flour. In a shallow bowl whisk the eggs.
  2. In another shallow bowl combine the panko, breadcrumbs and seasoning. Mix until well combined.  
  3. Dredge the oysters through the flour.
  4. Next dredge them through the eggs.
  5. Lastly, dredge them through the panko and breadcrumbs mixture. 
  6. In a medium saucepan, heat the oil until medium heat.
  7. Fry the oysters until they are golden, or about 4 minutes.
  8. Set them on a paper-lined plate to drain. 
  9. Prepare the sunset sauce by mixing equal parts cocktail and tartar sauce.
  10. To assemble the Po’ Boy, place the bottom half of toasted roll on a plate.
  11. Cover it with tomato slices and lettuce.
  12. Add 4 or 5 fried oysters and drizzle it with the sunset sauce.
  13. Top it with the bun and serve. 

Ingredients

Makes 4 Po’ Boys 

¼ cup Flour 

2 eggs, whisked 

½ cup Panko 

½ cup Breadcrumbs 

2 tablespoons JO Seafood seasoning  

20 Shucked oysters 

4 potato rolls, toasted and buttered 

Tomato slices 

Handful of Lettuce, rinsed and pat dry 

Cocktail sauce 

Tartar sauce
