Maine Lobster Avocado Toast topped with a Perfectly Poached Egg

Get ready for a journey through culinary excellence with our Lobster Avocado Toast topped with a perfectly poached egg. Originating in the vibrant café culture of Australia in the 1990s, avocado toast emerged as a beloved breakfast and snack option worldwide. It's simple yet a satisfying combination of creamy avocado, whole-grain bread along with succulent lobster meat and a perfectly poached egg. This dish truly embodies the spirit of culinary innovation, deliciousness and creativity.

Directions

Prepare the Lobster Avocado Mash: 





  • In a mixing bowl, mash the ripe avocado until smooth. Season the mixture with salt and pepper to taste. Set aside. 

 

Prepare the Lobster: 





  • In a small sauté pan, lightly sauté the lobster over low heat in the Lemon Garlic Herb Butter and the chopped chives. 

  

Poach the Eggs: 





  • Fill a large saucepan with water and bring it to a gentle simmer over medium heat. 
  • Add the white vinegar to the simmering water. The vinegar helps the egg whites to coagulate and hold their shape. 
  • Crack one egg into a small bowl or ramekin. Using a spoon, create a gentle whirlpool in the simmering water, then carefully slide the egg into the center of the whirlpool. 
  • Repeat the process with the second egg. 
  • Poach the eggs for about 3-4 minutes, or until the whites are set but the yolks are still runny. 
  • Use a slotted spoon to carefully remove the poached eggs from the water and place them on a paper towel to drain excess water. 

  

Toast the Bread: 





  • Toast the slices of bread until they are golden brown and crispy to your liking. 

  

Assemble the Lobster Avocado Toast: 





  • Spread a generous amount of the avocado mash onto each slice of toasted bread. 
  • Add a piece of the lobster drizzling it with the butter from the pan. 
  • Carefully place a poached egg on top of each toast. 
  • Garnish with chopped chives, red pepper flakes, microgreens, or any other toppings of your choice. 

  

Serve the Lobster Avocado Toast with Poached Egg immediately while still warm. Sprinkle with additional salt and pepper if desired and enjoy this delicious and indulgent breakfast or brunch dish! 

Ingredients

  • 1 ripe avocado 
  • Salt and pepper, to taste 
  • 4 nice pieces of lobster meat 
  • 1 tablespoon of Lemon Garlic Herb Butter 
  • 2 sprig of chive, finely chopped 
  • 2 large eggs 
  • 1 tablespoon white vinegar 
  • 2 slices of bread (your choice of bread, such as sourdough or whole grain) 
  • Optional garnishes: more chopped chives, red pepper flakes
