Soft Shell Crabs - A Chesapeake Delicacy

A soft shell crab, or soft crab for short, is an eastern shore delicacy. Often served broiled or fried in a sandwich, they can be enjoyed in a variety of ways. Soft shell crabs are harvested when the blue crab is going through its molting cycle. The crab gets too fat for its shell and must shed it in order to grow. During this process watermen must be vigilant to watch their catch closely and ensure they “fish them up” - a term for removing them from the water - at just the right time. Once a blue crab has shed its hard shell it’s only a matter of hours before their new softer shell begins to harden.
