1. Preparation:
Rinse our already cleaned soft-shell crabs thoroughly and pat dry with paper towels.
2. Spicy Garlic Butter:
In a small saucepan over medium heat, melt the butter.
Add the minced garlic and red pepper flakes, and cook for about 1-2 minutes until fragrant, but not browned.
Stir in the lemon juice and remove from heat. Set aside.
3. Seasoning:
Brush the crabs with olive oil and season with salt and black pepper on both sides.
4. Grilling:
Preheat your grill to medium-high heat.
Place the crabs on the grill, shell side down.
Grill for about 3-4 minutes per side, or until the shells are bright red and the meat is cooked through.
During the last minute of grilling, brush the crabs generously with the spicy garlic butter.
5. Serving:
Remove the crabs from the grill and place on a serving platter.
Drizzle any remaining spicy garlic butter over the crabs.
Garnish with fresh parsley and serve with lemon wedges.

4 tablespoons unsalted butter
4 garlic cloves, minced
