Vegetable Crab Soup
- 3 to 4 cups ham stock
- 3 cups ham, cooked and diced
- 2 cans mixed vegetables
- 2 cans tomatoes, cut up
- 2 cans crushed tomatoes
- 1 onion, chopped fine
- 2 tablespoons Old Bay seasoning
- salt and pepper to taste
- 1 pound jumbo lump crab meat
Mix ham stock, ham, vegetables, tomatoes, onion, Old Bay, salt and pepper in large pot or Dutch oven. Cook over low heat for 1 hour. Gently stir in crab meat. Cook for additional 20 to 30 minutes, stirring often. |
