Oriental Crab Cakes

  • 1 pound crabmeat, cartilage removed
  • 2/3 cup bean sprouts, slightly chopped
  • ¼ cup water chestnuts, chopped
  • 3 tablespoons scallions, chopped
  • 3 tablespoons celery, minced
  • 1½ teaspoons soy sauce
  • 1 large egg
  • about ½ cup bread crumbs or enough to hold together

Mix all ingredients together. Shape into patties and fry until brown.

Makes about 12.
