New Bay Crab Cakes with Ginger Lime Sauce
- 2/3 cup mayonnaise
- 1 tablespoon lime juice
- ¼ teaspoon cayenne pepper
- 1 pound jumbo lump crab meat
- 1 cup dry breadcrumbs, divided
- 1 jar (2 ounces) chopped pimiento, drained
- 2 tablespoons minced green onions
- 1 teaspoon chopped cilantro
- 2 tablespoons butter
Ginger Lime Sauce:
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tablespoon lime juice
- 2 teaspoons grated lime peel
- ½ teaspoon ground ginger
Mix mayonnaise, lime juice and red pepper. Add crab meat, ½ cup of breadcrumbs, pimientos and green onions. Form into 8 patties and coat in remaining breadcrumbs.
Cook patties in butter in a large nonstick skillet over medium heat 3 minutes per side or until browned and heated through.
Mix all ingredients for Ginger Lime Sauce. Serve over crab cakes. Makes ¾ cup.
