Maryland Crab Supreme Recipe

  • 1 medium size onion, finely chopped
  • 1 ounce butter
  • 1 pint sour cream
  • 1 ounce pimiento, chopped and diced
  • salt and pepper to taste
  • 1 pound lump crab meat

Saute onion in butter. Add 1 pint sour cream and stir. Let cook until bubbling for 10 minutes.

Add salt and pepper to taste. Blend in chopped pimiento.

In a double broiler, heat crabmeat with a small amount of water added. When hot, pour liquid into sour cream mixture and blend. When both items are prepared and you are ready to eat, add the crabmeat to the sour cream mixture, and blend lightly so as not to break up the crabmeat. Serve over toast triangles with a vegetable.
