Fish Croquettes with Dipping Sauce

  • 1 teaspoon olive oil
  • ½ cup minced shallots
  • 16 ounces fresh tuna or salmon
  • ½ cup breadcrumbs
  • ½ cup finely grated Parmesan cheese
  • 2 tablespoons finely chopped fresh tarragon
  • ½ teaspoon finely chopped fresh parsley
  • 1 egg, whisked
  • ½ cup pear juice
  • ½ cup canned mandarin oranges
  • 2 teaspoons garlic paste
  • 4 tablespoons sesame oil

Place the oven rack on the middle shelf and preheat the oven to 350 degrees.

Combine the olive oil, shallots, salmon, bread crumbs, cheese, tarragon, parsley, and egg in a food processer and pulse until a wet paste is formed.

Shape the mixture into 10 balls with about 2 tablespoons each of mixture. Bake on a sheet pan for 15 minutes. The croquettes are done when they have become slightly firm and are golden.

In a small bowl combine the juice, mandarin oranges, garlic paste, and sesame oil. Gently mix, so as not to break up the oranges. Set aside to steep.

Serve the croquettes with the dipping sauce.

Makes 5 servings.
