Deviled Crab Dip

  • 1 pound special crab meat, flaked
  • 2 eggs, beaten
  • 3 cups milk
  • ½ cup flour
  • ½ cup butter
  • ½ cup chopped onion
  • 2 tablespoons mustard
  • 2 tablespoons chili sauce
  • 2 tablespoons minced parsley
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon salt
  • 2 dashes hot pepper sauce

Cook onion in butter until tender.

Stir in flour, mustard, Worcestershire sauce, salt, chili sauce, parsley, and hot pepper sauce. Add milk. Cook over low heat, stirring constantly until thickened.

Stir a small amount of hot mixture into beaten eggs, then return egg mixture to pan. Cook, stirring several minutes. Add crabmeat. Stir gently until crab meat is warm. Serve warm with assorted crackers and chips.
