Corrine's Spicy Crab Soup
- 3 quarts water
- 1 large can V-8 juice
- 1 pound can crushed tomatoes
- 1 pound mixed crab meat
- 1 large onion, diced
- ½ cup celery, diced
- 1 tablespoon salt
- ½ teaspoon black pepper
- 2 tablespoons Old Bay seasoning (more to suit taste)
- 1/8 teaspoon cayenne pepper
- 1 tablespoon oregano
- 4 cups mixed fresh vegetables (potatoes, carrots, corn, string beans), cut up
Fill a large pot with water, juice, tomatoes, seasonings and fresh vegetables. Simmer until vegetables are tender.
Add crab meat and simmer an additional 15 minutes before serving.
Serves 8 to 10. |
