Corrine's Spicy Crab Soup

  • 3 quarts water
  • 1 large can V-8 juice
  • 1 pound can crushed tomatoes
  • 1 pound mixed crab meat
  • 1 large onion, diced
  • ½ cup celery, diced
  • 1 tablespoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons Old Bay seasoning (more to suit taste)
  • 1/8 teaspoon cayenne pepper
  • 1 tablespoon oregano
  • 4 cups mixed fresh vegetables (potatoes, carrots, corn, string beans), cut up

Fill a large pot with water, juice, tomatoes, seasonings and fresh vegetables. Simmer until vegetables are tender.

Add crab meat and simmer an additional 15 minutes before serving.

Serves 8 to 10.
