Choptank Crab Fritters
This dish is made moist and delicious by the addition of bamboo shoots. Its lightness comes from the beaten eggs, which, when first fried, immediately bind all the ingredients. Check out the recipe for choptank crab meat fritters below!
- 2 cups sliced bamboo shoots
- 1 cup chopped onion
- 4 tablespoons soy sauce
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon ginger
- 8 eggs, lightly beaten
- 1 pound special crab meat
- butter for frying
Combine all ingredients, adding the crab meat last.
In a frying pan, heat ½ cup of butter. Drop the fritter mixture by large spoonfuls into the hot butter. Fry to a golden brown, turning once.
Makes 8 to 12 servings. |
