Chopstick Crab

This recipe was the Grand Prize Winner in the 1975 National Hard Crab Derby in Crisfield, MD.

Credited to Mrs. Joyce Schaefer of Seaford, DE.

  • 1 pound lump crab meat
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • dash of Tabasco sauce
  • 1 can condensed cream of mushroom soup
  • 2 cups chow mein noodles
  • ½ cup Half & Half
  • 1 cup sliced celery
  • ¼ cup chopped onion
  • ½ cup salted cashews

Break crab meat into bowl, sprinkle with lemon juice, Worcestershire sauce and Tabasco sauce. Toss gently.

Add celery, onion, cashews and 1 cup of noodles to the cream of mushroom soup. Add Half and Half. Toss lightly with crab meat.

Place in individual crab or shell dishes. Sprinkle remaining noodles on top, and bake at 375 degrees for 15 minutes or until heated through.

Garnish with mandarin orange sections.

Serves 4 or 5.
