Bread and Butter Pickles

Worth the effort. And a perfect gift! Store in mason jars for presentation.

  • 10 cucumbers, peeled and quartered
  • 4 small sweet onions, sliced into ¼-inch discs
  • ½ cup salt
  • 4 cups granulated sugar
  • 2 cups apple cider vinegar
  • 1 teaspoon turmeric
  • 1 teaspoon celery seed
  • 1 tablespoon mustard seed

In a large bowl, combine the cucumbers, onions, and salt. Cover with ice and another heavy pot so that the contents are compressed. Let sit for 2 hours. Drain completely.

In a large heavy pot, combine the cucumbers and onions with the sugar, vinegar, turmeric, celery seed, and mustard seed. Bring to a boil over medium heat. Cook until the cucumbers are tender, or about 5 minutes. Carefully place the cucumbers into a glass jar with the liquid. Place in the refrigerator to cool.
