Baked Rockfish with Potatoes

  • 2-3 pound rockfish
  • 1 large onion
  • 5 medium sized potatoes
  • 4 thin slices salt pork or 3 tablespoons bacon grease
  • 2 tablespoons flour
  • 1½ cups water
  • salt and pepper to taste

Peel the potatoes and cut into rounds. Dice the onion. Put the potatoes and onion into a baking dish with the fish. Salt and pepper to taste.

Add the salt pork or bacon grease, arranging around the fish.

Mix 2 tablespoons of flour in 1½ cups of water and pour over the fish, onion, potatoes, and salt pork. Cover the baking dish, and bake at 350 degrees until the rockfish is brown. Baking time is about 1 hour for this baked rockfish with potatoes and onions.
