Althea's Crab Meat Cakes
  • 1 pound backfin crab meat
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons onion juice
  • 2 teaspoons parsley flakes
  • 2 eggs, beaten
  • 2 teaspoons dry mustard
  • 2 slices dry wheat bread made into crumbs
  • 1 tablespoon baking powder
  • 4 tablespoons butter, softened slightly
  • 1/4 teaspoon seafood seasoning
Combine all ingredients and shape into cakes. Pan fry in butter until browned on both sides. Serves 4.
