Crab Fritters

A crab meat and batter crab fritter recipe with an Asian influence

  • 2 cups sliced bamboo shoots
  • 1 cup chopped onion
  • 4 tablespoons soy sauce
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon ginger
  • 8 eggs, lightly beaten
  • 1 pound crab meat
  • butter for frying

Combine all ingredients, adding the crab meat last.

In a frying pan, heat ½ cup butter. Drop the fritter mixture by large spoonfuls into the hot butter. Fry to a golden brown, turning once.

This makes 8 to 12 servings.
