For fun, stuff the potatoes with chopped Blackened Shrimp. Spicy!
- 4 large baking potatoes
- ¼ cup vegetable oil
- Fine sea salt
- Sour cream, for serving
- Compound butter, for serving
Heat the oven to 400 degrees.
Prick the potatoes all over with a sharp fork. Rub the potatoes with the oil and sprinkle all over with sea salt to taste.
Bake for 60 minutes or until a skewer passes easily through the potato.
Serve with plenty of sour cream and compound butter.
Makes 4-8 servings.
