A Jimmy Treat Recipe

This fried crabcake recipe was the Third Place Senior Range Winner in the 1972 National Hard Crab Derby in Crisfield, MD.

Credited to Grace Maddox of Marion, MD.

  • 1 pound lump crab meat
  • 1 cup milk
  • 5 drops Tabasco
  • ½ teaspoon parsley flakes
  • salt and pepper to taste
  • 30 Ritz crackers (crushed)
  • 1 tablespoon flour
  • 1 teaspoon mustard
  • 2 slices bread
  • ¼ teaspoon crushed red pepper
  • oil for frying

In a saucepan, mix together flour and milk. Cook over medium heat until thickened. Let cool. Add Tabasco sauce and mustard.

Pick over crab meat. Add bread crumbs, parsley flakes, salt, pepper and crushed red pepper. Add cooled sauce, mix thoroughly.

Shape into cakes. Roll in cracker crumbs and fry until brown.
